Seriously…Banana Pudding.
My mom and my Aunt Sue both make the best Banana Pudding. Personally, I have never attempted it, because I fear. I fear mine will not be near what theirs is – lush, sweet, and bursting with flavor and childhood giddiness.
Instead, I wait for potlucks, Thanksgiving, the Fourth of July, and the occasional surprise dessert after dinner days to get my fill of this creamy goodness.
Until now.
As part of my work with Krusteaz, I get asked to create new things to do with their already excellent mixes. It’s not a chore, I tell you. I enjoy every single minute. The mixes? They rock on their own, but are truly the most forgiving and adaptable products…you can make so many changes and they JUST WORK.
Gotta love when something works.
So, today is Pancake Day, and in celebration, I created these Banana Pudding Pancakes for you to try. Are they as good as Banana Pudding? Hmmm. Maybe! They’re definitely full of banana yum and make for a fun switch up in the pancake repertoire! Enjoy!
Banana Pudding Pancakes

Ingredients
2 cups Krusteaz Buttermilk Pancake Mix
1/3 cup banana cream pudding mix
¾ cup milk
¾ cup water
1 teaspoon vanilla extract
1 medium banana, mashed
